When a young boy doesn't like miso soup because he thinks it moves and there is a ghost in the bowl, his grandmother takes him to the Hatchō Miso factory in Okazaki, Japan to learn how it is made.
He learns that his “ghost" is the kōji used to ferment the soybeans that become miso.
He also learns how nutritious miso is and how the protein in it is “meat from vegetables”.
